It sounds like it depends on whether you want to stay where you know everyone/thing, or strike out and go to a new place and meet new people.
I know what ~I~ would do...
But that's not necessarily what ~you~ would want.

So here is some pros and cons for you 
I am kinda but I think it is 50/50 right now
So here is some pros and cons which I thought in this morning (ok I slept really 2 hours last nigth so my brain is not working correctly but....):
Here is pro and cons for UK.
Pros:
The salary is very very good. The starting package is great. Less
teaching load. Very close to math department. Pre-tenure sebbatical (Fall 2006) for learning more stats. This is a new place for me so more exciting.... No undergrats but only graduate students. cheap to live.
Cons: Less freedom. I am not so familier with teaching stat
courses I have to teach after all....). Less people I know. My advisor told
me that he knows many people left UK for some reason (he said at least 5).
Here are pros and cons for NCSU.
ros: Math department. So I am very familir with. More freedom on what I want. I know
more people at NCSU. I can
hire a postdoc a year. One month summer salary included. Math department at NCSU is very
very strong (it is very good school).
Cons: less salary (but the chair negociated with the dean and he got as much
as he could....). heavy teaching load (prob I would ask for reducing
teaching loads). It is so close to Duke so less exciting. More expensive to
live.

It sounds like UK is better for you both in terms of salary and expenses.
Plus, you keep saying that it's an exciting opportunity for you. The
advantage that NCSU seems to offer you is that it's much less effort for you.
You don't have to worry about stretching yourself as much academically or
making new friends. So, hurry up and decide between greed and
slothfulness
