Well, if not only BGMs count i'll go with the "Hymns" of a video game series titled "Ar Tonelico". These hymns are "battle songs" sung by "Revateils" (The cute female characters that go with the male lead character).

Here are some samples (also some of my favorites):
(Consider this a tribute for this series celebrating this week the release of the third game in the saga, so it's going to be a rather long list :P)

Well the frontier between anime and videogame is really thin, this OST sounds interesting with some sounds close to the "Secret Of Mana" oldie (EXEC_LINKER piano really close to the "Eternal recurrence" from Undine elemental cave http://www.youtube.com/watch?v=ghKpsiv-scQ or "Star of Darkness" forbidden continent theme http://www.youtube.com/watch?v=KH4vY2kyQDw), never heard about the "Ar Tonelico" game but this music looks like some RPG no ?

Coming back to anime I'll quote a recent OST I listened too (I think I'm an OSTholic), the Hajime No Ippo one, in fact I listened to it before watching the anime and I thought that the BGM were in particular underlining boxing.

2nd OP "Inner Light" : http://www.youtube.com/watch?v=x1VNM57PHms
BGM "Silent eyes" : http://www.youtube.com/watch?v=tLBBZfD7lv8
BGM "B.B.B." : http://www.youtube.com/watch?v=x_ymermFQSI
BGM "Naked Fang" : http://www.youtube.com/watch?v=MoLvqSMWC38

I will back-up jcaliff's & Sensei's earlier opinions, that anything created/produced by Yoko Kanno is always worth a listen or few.......

She is an absolute rare talent & her musical prowess encompases many different genres, sometimes even melding two or three together to create a piece that is both unique, yet very listenable (is there such a word??).

A sample of her works include:
Escaflowne (operatic, classic)
Macross Plus (mix)
Wolf's Rain
Cowboy Bebop - both TV & movie (Jazz infused)
Darker than Black
Ghost in the Shell TV (electric, pop, jazz)
A helping hand in Rahxephon
Arjuna (as Sensei made note earlier, Purely Awesome soundtrack.....pity about the rest).

Hmm interesting topic...have to dig through the disks for this one!

I'm glad folks have mentioned Cowboy Bebop...for all around music experience, it really is an amazing collection of music. From jazz to pop to metal, and of course Steve Conte's "Call Me", there is something for everyone in there.

Some of my other favorites are (with samples):

Noir http://www.youtube.com/watch?v=soGzGCxW27c

Outlaw Star http://www.youtube.com/watch?v=LOnh2eV1 ... re=related

Read or Die http://www.youtube.com/watch?v=FiyU3EJmhxI

Last Exile http://www.youtube.com/watch?v=76amQKMi9zw

Haibane Renmei http://www.youtube.com/watch?v=CxY0ALI7izo
-I walked out to this song when I got married, and it still makes me tear up a bit when I hear it lol-

Special Mentions:
Gankutsuou-Count of Monte Cristo (classic plus rock)
Inuyasha
Hellsing (original series with "World Without Logos"
Initial D (for the techno folks out there!)
Trigun (similar to Bebop, mix of music)

Special special mention for:

Black Lagoon opening song http://www.youtube.com/watch?v=IOmNWL5nzE4
and the first season opener of Gantz lol

Another vote for anything Yoko Kanno. Especially Ghost in the Shell: SAC, and Tabbykitty, that's a good Outlaw Star choice. It was the first OST I had ever purchased.

In no particular order:

X TV OP: http://www.youtube.com/watch?v=_W-eEilKDM8

Zoids: http://www.youtube.com/watch?v=JrtgIua1fjk

Beck: Mongolian Chop Squad, Hit in the USA: http://www.youtube.com/watch?v=yWFRZ-kekUg

Any theme from Getbackers (here's a few):

Almost any Joe Hisaishi collaboration with Miyazaki,

First three Escaflowne,

Haibane Renmei,

Macross OSTs I and II,

Akira,

Ghost in the Shell Movie,

Noir,

Last Exile,

......

Now, there are quite a few which I would list as favorites, which I wouldn't dare put in the "Best" category. ^_^
