Project Gotham Racing 3 - Good, but difficult racing game.
Kameo Elements of Power - A fantasy adventure game.
Perfect Dark Zero - Good for FPS multiplayer
Fight Night Round 3 - Only if you like boxing games.
Quake 4 - Gorey FPS
Elder Scrolls IV Oblivion - First Person RPG
Saint's Row - GTA-style game with more customization
Tony Hawk's Project 8 - Has a fun trick system
Rainbow Six Vegas - Just an improved version of the last.
Splinter Cell Double Agent - Great multiplayer
Dead Rising - Fun for a while, not for the retail price, though.
Dead or Alive 4 - Solid fighter, but feels a little cheap.
Games to look out for:
Crackdown, Bioshock, Cold Planet, Def Jam Icon, Halo 3
Just my personal favorites. I'd avoid Call of Duty 3 and Need for Speed Carbon.

To add on to what people said above...
Oblivion is my fav -- I've been playing for over 200 hours, and am still not done
Tomb Raider is also pretty good, especially if hunt down all the awards
Kameo is a lot of fun, although a bit on the short side -- but there are expansions available now on xbox live
Viva Pinata is strangely addicting... once you start, you'll have a hard time putting it down
Don't forget about the xbox live arcade games
Uno - great for a relaxing game, different card sets have different game rules
Doom - one of the original first person shooter games, in its grainy glory
Lumines Live - Great tetris-eque fun
Marble Madness - Single and muliplayer 3-d maze marble action
Small Arms - Reminds me of Super Smash Brothers, lots of fun
Jewel Quest - more puzzle fun
Zuma - Simple concept, but becomes increasingly challenging. Highly addicting.

I just started playing Crackdown, and I'm totally addicted to it. It's a 3rd person platform shooter. I love how the world does progressive loading (no wait screens once you are in action) and you can do the quests in whatever order you want. If anyone else has it and needs a coop buddy, let me know
