Byakuya and Ichigo
I can't really pick one favorite though, since you have a lot of good ones out of the shows I've actually seen (which really isn't that many.)
I like how they're fighting here, with Ichigo using Zangetsu to block Byakuya's sword.

Other than a couple episodes of Ranma 1/2, the only show I've watched out of all the ones you have cels of is Inuyasha, so I'll pick a favorite from that anime. Inuyasha and Kagome Battle Scene
I like this one a lot because of all the rocks flying about from the attack.
