Rozen Maiden. 12 episodes, creepy (porcelain doll comes alive and possesses teen owner story line), psychopathic (both the doll, the owner, and the owner's ditzy sister have serious, diagnosable mental disorders), and often extremely funny at the same time.
Let me ditto Hellsing. 13 episodes that will make you seriously rethink the relationship between Catholicism and the Church of England. (IM, Christianity is based on a symbolic form of ritual cannibalism, ne? So it makes sense that a certain number of vampires would convert to Christianity and ... well ... go on living pretty much as usual.) The "next episode previews" are worth the watch anyhow.
For nostalgia freaks: the Ah My Goddess OAV (5 episodes, the last a double-length one). Now that it's available on DVD, it's a much better deal than I had when you could only watch it by buying 5 tapes at $15/$20 a pop. Classic voice acting (hear Hisakawa Aya before she was Kero-chan or Yuki Sohma) and great music. I actually was led into anime by the AMG OST, which I used to listen to obsessively.
