Another vote for Escaflowne. It feels like you're watching an action packed magical movie most of the time. I love it :d
I also think Ouran High School Host Club does a good job with it's "classical music" background and cute vocals.

the animation who have the best music is Tenku No Escaflowne!! (TV and movie) (music by Yôko Kanno and Hajime Mizoguchi, sang by Gabriella Robin, Maaya Sakamoto, Styve Conte, Aceilux, and Hiroshi Wada).
"Arcadia", "White Dove", "A Far Cry", "The Vision of Escaflowne", "Dance of Curse", "chain", "Love", "Perfect world", "If You", etc.
One other animation who have wonderful musics is Wofl's Rain (it's the same staff as Escaflowne music team) ^_~
"Heaven's not Enough", "Cloud 9", etc....
