After seeing Trinity Blood rilezu through peoples gallery updates, I became more interested in watching it when it came to AS. (although, I would have watched it anyway, due to other influences)
There are some shows that moved up on my "to watch" list due to seeing the production art that some people have collected.
But, I would have to say that my answer is no. Cel/Sketch collecting does not influence my viewing habits. I collect very few different series, and I watch lots of different shows of lots of different genres.

If someone is particularly passionate about an anime and has a large collection, I may become more curious and want to see it.
Since I have also started to collect from shows I have never even seen, I think this is also really good in a way, and I may not actually WANT to get into it. That way I won't feel I have to feverishly search for a certain scene, and won't feel like I must take part in a bidding war because I know that the particular character/episode is hard to come by. I won't feel all this, because I don't have any viewing/fandom experience.

Actually, that's exactly why I started collecting from Ah! My Goddess! When I was browsing Rubberslug and came across some recently updated galleries, there were a lot of nice Ah! My Goddess cels from many of them. One of my friends from down under started collecting sequence mates of most of the cels and I became fascinated with the show.
Then with the help of fellow Rubbersluggers, I gathered more information on Ah! My Goddess and acquired my first AMG cel from NurseNikki! ^_^ Ever since I've been hooked on the series. It's so lovely and enchanting...and I just love the TV series now (thanks GoldKnight! ^_^).

Somewhat. Ever since I started cel collecting, whenever I see a part of a series that I like, I would ocasionally say to myself "I want that scene".

When I first started collecting, I had several cels from series I hadn't seen yet--I had read the manga, but I hadn't gotten around to watching the series. I try not to do that too often anymore. I've got enough on my plate to start collecting from series before I actually find out if I like the series--even if it has pretty art, or a lot of other people like it.
For example, Trinity Blood is really popular, and for a while, everyone was buying up Relizu from the show. Being behind on the game as usual, I started watching the show after it had been licensed. I just couldn't get into it, and I think I got about half-way through it. I might finish it up one of these days, but I'll never collect art from it.
So, I still pick anime the way that I would before (good plot? cute boys? etc.). Only now, I get to see what's popular before it hits the US, since I see the sketches/repros/relizu start to pop up in people's galleries. It might make me research a series, but I don't watch solely based on artwork.
I will, however, pick out shots that I would love to have as a cel.
I've actually been able to find a few of those from Daa! Daa! Daa! I haven't gotten "exact" wishlists from any other series, though.

I have always watched anime for the pure pleasure of watching anime. I've never watched it to collect. The collecting bug is just stemmed from the need to have something tangible from a favorite series or most likely character.
