Like others have said, it really depends. If it's catchy and has cute and/or fun action, I can watch it again and again. UNLESS I'm in a hurry to find out what happens next, or I'm just too tired.

I have a system for op/ed. Usually I watch the entire first episode, and for longer series like naruto/bleach/IY etc.. I'll watch the new op/ed when they appear. Then as a rule I always watch the next to last episode in its entirety, for example if the series has 26 eps. I make sure to watch all of ep25. I noticed that sometimes they don't run openings to "extend" the final episode. Its weird I know, but its something I've done since anime was new and exciting, and everything I watched was good. That not being the case anymore (I've sat through a lot of crappy anime since then), I still feel the need to keep that practice. My all time favorites are YYH opening and Rahxephon ending. I could watch/listen to those all day, which I plan on doing once I get back home. Other notables are nadesico op, and several of the IY and Naruto op/ed.

I haven't been enjoying too many Ops and EDs lately, but the ones I can recall that I enjoyed more recently were:
Devil Survivor 2 ED:

I liked how the ED kept changing. It only showed the characters that were still alive in the show. This video shows all of the characters before they started disappearing. It was a good closing song to end the anime episodes on too.

Really great looking opening, with a Pop Art style.
It gives you the setting: just beneath the normal surface of our daily lives, there's a world of aliens.
But, its menacing feel of "Prince Baka - Alien Hunter", is the polar opposite of the show... which points to the anime's punking, "I got you", humor.
Hyouge Mono - 4/11

The combination of the smooth music and Sengoku-jidai battle scenes, with the modern city scenes, and traditional Japanese clothing and artifacts was really unique.
It matched with the dichotomy of the show's lead character, a warrior aesthete.

Also, the dialog helped to define Fujiko's character as a strong, unscrupulous woman, who uses men as she pleases, as she follows her desires.
