How was a few episodes here and there but never had a chance to sit down and watch anything to completion?

Well, I know I'm one of the bunch of GW fanatics around here, so I'll say this ... I'd start with the TV series. The movie, Endless Waltz, will be missing a bit without the background story of the series.
The Operation Meteor (otherwise known as Odd & Even numbers) footage is best watched after the series, and the manga, Battlefield of Pacifists fills in the gap between the end of the series and the movie. Also, the Episode Zero manga fills in the back story on each character. Most of this stuff I wouldn't recommend unless you watch the series and really enjoy it.
I'm another one of those big Gundam Wing fans. Just look at my username. It's not hard to miss. Definitely start with episode 1 of the tv series. Endless Waltz OVA is the final 3 episodes of the tv series. You don't have to watch them as the tv series does have an ending but the OVA just adds to it. And if you've gone that far, why not?
Agreeing with zero even more, if you want to watch Odds & Evens, then you should really read Battlefield of Pacifists first. It'll help you understand what's going on as from what I know Odds & Evens has never been fansubbed. I've only ever seen the raws. It also takes place after everything else.
