Myanimelist.com is having hacker problems again so I don't recommend going there right now (particularly the forum). There is an animesuki thread on this now:

Does anyone know what happens if you defriend someone on MyAnimeList?
Does the person get a message saying they have been defriended?
By the way...I wasn't planning to defriend anyone that I've known from here.

To the best of my knowledge, they just fall off your list and vice versa. I don't think anyone gets a notification. I've defriended there and never saw or heard anything from said person.
Can you hear this fangirl squee?!

Hmm, I suppose it would be better that way than getting a message saying that "you were defriended" (especially considering how angry some people can get). It's better to quietly disappear.
I think it was good that the friend lists were moved off the front page. There were so many people that were accumulating "friends" just to show how many people they had. I got invitations from some of them. They had been sending out invitations to become friends to several people each day for several months.
